Regarding PurchaseOrder Transaction(850)

Hi All

I am working with 850 Transaction(EDI-X12) which is in Biztalk Server. what my doubt is, while going through that i had seen that they had design Maps and Orchestrations like..

i am not getting why they had done.. like that…, so please do favour to me..
