Our Ops team is interested in renaming our BizTalk Servers to conform with a new naming convention. What steps need to be taken in order for this to work? These are not developer installations, but rather enterprise deployments with remote SQL Server instances. Is it a matter of just unconfiguring BizTalk, changing the server name and then reconfiguring them so that they join the existing group?

Yes, I think that’s all that is required. You need to do just what you said, unconfigure, rename, reconfigure.
Also note the next time you lost into BizTalk Admin, you’ll need to re-add manually the new BizTalk Group. Since the admin tool will be pointing to the wrong group.
